A first for Francois - a new parcel of Chenin. A light maceration yet still uniform Chenin that we know and love - baked apples, a little tropical… this is full of energy and life.
A third of the harvest was whole bunch macerated for about 2 weeks, while the rest was directly pressed. They were kept separated in 600L barrels plus the Stockinger (1200L), then everything was put together a few weeks before bottling.
