Fresh tangerine & pineapple with underripe plum, cherry stones, dusty acidity with herbaceous earthiness.
The vines are bush trained and cultivated by horse, 70% was destemmed, 15% whole cluster and the rest was trodden for the juice to keep it covered and healthy. Relying on pump-overs, it spent 11 days in this partial “hamburger method” until being put into stainless steel.
Unfiltered, unclarified, bottled without added sulfite. No pump or bottling machine is used, bottling is done by gravity.
