Zippy sparkler with plenty of crisp apple and lemon citrus, secondary notes of elderflower and green melon and an electric line of acidity that spreads over the tongue and sets the mouth watering. The bubbles are impressively fine-beaded for a wine made in this style. The overall character is unmistakably Loire and makes for a note-perfect aperitif.
Clic Clac is Mikaël’s lean and pristine pet nat of Menu Pineau, from vines over 60-years old planted over gravelly limestone. Everything here is done by hand; the wine is transferred from tank to bottle during the primary fermentation and then racked upside down on traditional wooden slats in contact with the lees for six months before being disgorged with the turn of spring.
