A blend of direct-pressed Côt and Gamay from vines planted over gravelly limestone, this is Mikaël's more-ish rosé pet nat. The wine is transferred to bottle from tank during its primary fermentation and disgorged by hand in early spring.
A fraction of residual sugar lends succulence, which in turn is balanced by green, underripe strawberry and bright red bramble fruit. Contact with the lees lends a savoury, saline undernote. Its gentle fizz lends itself to particularly easy drinking - a perfect bottle to reach for on al fresco summer afternoons.
